For 38 Calories a serving of one cup of Kale, this vegetable is a winner among all vegetables. Kale is a wrinkled dark green vegetable. It is easy to find in supermarkets. You can also grow it very easily in colder temperatures where a light frost will produce specially sweet kale leaves.
Kale has so many health benefits. With abundant of vitamin K, A, and C in only one cup you will have much more than the daily required amount of these vitamins. It is also a very good source of manganese, dietary fiber, calcium, copper, vitamin B6, Iron and potassium. This combination of vitamins, minerals, and phytonutrients makes kale a great vegetable to have!
When we eat Kale, it makes our liver to produce enzymes to detoxify cancer causing chemicals, to inhibits chemically induced breast cancers, and to kill the colon cancer cells.
Kale being rich in A vitamin is well known for its carotenoids. These carotenoids act like sunglass filters and prevent damage to the eyes from excessive exposure to ultraviolet light where increased eye cloudiness leads to blurred vision. People who have eaten lutein-rich foods like kale had a 50% lower risk for cataracts.
If you are a smoker, or exposed to second hand smoke, You should have vitamin A rich foods, such as kale. The research was found that cigarettes cause vitamin A deficiency, but a diet rich in vitamin A can help counter this effect.
People on blood thinner medicine should not take Kale since it has so much Vitamin K. Always remember moderation in everything is the key.
